Goose Liver Hash
Ingredients
- Goose heart and liver – diced
- A handful of diced onion, potato and mushroom
- A handful of roasted chestnuts – chopped
- A handful of smoked bacon – diced
- Knob of butter
- Handful of chopped parsley
- Sea salt seasoning
Method
- Fry the goose liver and heart in a pan until golden
- Meanwhile, in a separate pan, fry off the diced bacon and add a knob of butter
- Add all remaining ingredients into the pan with the bacon
- Add the chestnuts
- Season with sea salt and add a handful of chopped parsley
- Once liver and heart are golden, add all ingredients together and mix
