• Goose heart and liver – diced
  • A handful of diced onion, potato and mushroom
  • A handful of roasted chestnuts – chopped
  • A handful of smoked bacon – diced
  • Knob of butter
  • Handful of chopped parsley
  • Sea salt seasoning


  1. Fry the goose liver and heart in a pan until golden
  2. Meanwhile, in a separate pan, fry off the diced bacon and add a knob of butter
  3. Add all remaining ingredients into the pan with the bacon
  4. Add the chestnuts
  5. Season with sea salt and add a handful of chopped parsley
  6. Once liver and heart are golden, add all ingredients together and mix
