Cullen Skink
Ingredients
- 2 large potatoes
- 2 oz smoked bacon
- 1 large onion
- 2 cloves garlic
- 2 pints milk
- ½ pint heavy cream
- 2 smoked haddocks/trout
- ½ lb white crab meat
- Salt and pepper
Method
Bring a pan of salted water to the boil
Add smoked Bacon to a dry pan, cook off for a few minutes
Peel and dice the Potatoes and Onions. Add the diced Potatoes to the salted boiling water
Add diced Onions to the Bacon in the pan
Add two large cloves of Garlic to Bacon and Onions
Add Milk 2 pints
Add Cream
Remove the skin from the Smoked Trout
Flake and add to the pan
Drain the Potatoes and add to the smoked Trout
Leave to simmer for 20 minutes
After 20 minutes;
Add Crab meat
Add a large handful of chopped Parsley and stir
Lightly break-up the Potatoes by pressing down, using the back of a ladle
Add pinch of Salt and Pepper
Serve
Breakfast Omelette
Ingredients
- 1 small bunch asparagus
- 4 fresh eggs
- Large knob of butter
- Tablespoon of crème fraiche
Method
1 x bunch of Asparagus, cut in half and add to a pan of boiling water
Add 4 eggs to a bowl, whisk and add Salt, Pepper and a tablespoon of Creme Fraiche
Fillet Sea Trout
Dice the filleted Trout and then season well with Salt
Add a large knob of Butter to a pan
Drain the Asparagus and add a knob of Butter, then remove from the heat.
Add diced Trout and Asparagus to the pan of melted Butter
Add chopped Parsley to the whisked eggs, stir and then pour over the Trout and Asparagus
Once cooked, season with salt
Serve.
