This lovely little recipe is delicious and uses the offal from a wild goose.
Ingredients
Goose heart and liver – diced
a handful of diced onion –
a handful of potato
a handful of mushroom
a hand full of roasted chestnut
a handful of smoked diced bacon
a knob of butter
a handful of chestnut chopped
a handful of chopped parsley
Method
Step 1
Fry all the diced ingredients except the liver and heart in the pan with the bacon
Add the chestnut chopped
Season with sea salt
and add a handful of chopped parsley
Step 2
Fry the liver and heart in a separate pan til golden then add the diced mix
